Pui Shak Er Chorchori brings together fresh Malabar spinach, seasonal vegetables, and simple spices to create a flavorful Bengali dish that feels wholesome, comforting, and deeply satisfying.

Ingredients

  • Vegetables
  • Pui Shak/Malabar Spinach,
    Potato,Pumpkin,Eggplant,
    Green chillies, Coriander

  • Spices
  • 1 tsp turmeric,
    1 tsp red chilly powder,
    2 tej patta (bay leaf),1 whole dry red chilly
    Paanch phoron (bengal five spices)

  • 1tsp Sugar (optional)
    Hot Water

Directions

  • Take a Pan and heat it with oil.Put dry red chillies and bay leaf in it.
  • Add the panch phoron in it and fry.
  • Add the vegetables one by one and stir fry them. Add 1 tsp of turmeric in it and fry a little.
  • Cover the lid for about 2 mins for a quick boil.
  • Stir fry the vegetables.
  • Add hot water to the vegetables.Again cover it with lid.
  • We prefer to make it a bit sweet so we add 1-2 spoon of sugar.Its optional though.
  • Add some coriander for garnishing.
  • Now you can plate the chorchori.Serve it with rice or roti.
